Passover Recipe: Bettye Anna’s Granola

Servings: Makes 6 ½ Cups Prep: 10 min Bake: 15 min

Ingredients

3 C matzo farfel ¼ tsp nutmeg

2/3 C sliced almonds 6 TB unsalted butter

½ C sweetened coconut Note 1 1/3 C wildflower clover honey

2/3 C pecans, in large pieces 1½ C chopped, dried, mixed

¼ tsp salt fruit of choice

1½ tsp cinnamon cooking spray to grease pan

Special Utensils

Large cookie (jelly roll) pan with 1”sides

Directions

1. Preheat oven to 325 F, grease pan with cooking spray

2. Combine farfel and next 6 ingredients into medium bowl

3. Melt next 2 ingredients in glass bowl in microwave, 1 min

4. Stir hot butter/honey mix into farfel mix, stirring to coat

5. Spread granola mix on prepared pan, bake 15 min

6. Stir after 7½ min to brown evenly, remove granola from oven

7. Cool slightly then stir in dried fruit, let fully cool

8. Store in zip lock baggie or sealed container

Note:

1. May use unsweetened coconut in place of sweetened

This tasty recipe comes from Eileen Lynn, who is a member of Temple Shalom in Dallas, Texas. When tested our tasters could not get enough of this crunchy snack. Say goodbye to store bought Passover cereal. Pour milk on top and say hello to an outstanding granola alternative.
